I have two ideas for you.
one is make a salad and top it with popcorn chicken.
another is make kfc bowls-take mashed potatoes in a bowl and top it with popcorn chicken,corn,shredded cheese and top it with gravy to melt the cheese.They are really good!

You could maybe put them in wraps (you know like tortillas) with some diced up lettuce, tomatoes, etc. and some sort of dressing. I think KFC has something like that.

It would look, umm...., odd, but you could make a chicken parmesan-type thing. Cook the popcorn chicken (I'd bake it), pour spaghetti sauce over it, and serve over some kind of pasta. Top with your fav. cheese. Easy!
