These all use a small amount of ham and are perfect for useing the last of your christmas Ham.
HAM QUICHE
3 beaten eggs
1 cup sour cream
1cup grated cheese
1/2 cup sliced green onions
2 tsp. onion salt
1 cup finely chopped cooked ham
1 deep dish pei crust ( I use jiffy pie crust mix .50 cents)
BAKE pie crust for about 10minutes. mix all ingredients together. pout into baked crust. Bake at 425 for 25 minuntes.
OVERNIGHT CASSEROLE
1 loaf white bread ( stail from the discount rack works good)
4 eggs
3 cups milk ( use powder milk if you have it to save a few pennies)
1 lb. shredded chesse ( sharp chedder or swiss , whatever you have)
salt and pepper
2 cups diced ham ( or less if you dont have this much)
cut crust off bread and butter both sides. Beat eggs well and blend in milk. dip bread into mix. Place on layer in bottom on 13x9 pan. Cover bread with half inch layer of grated cheeese, put in all of the diced ham.. Cover with another layer of bread dipped in egg mixture. Cover the bread with the rest of the cheese. Pour the remaining egg mixture on top. Refridgerate over night. Remove from refrigerator 1 hour before baking. Bake are 350 for 1 hour.
HAM PIE
2 cups diced ham
1 cup shredded cheese
1/3 cup green diced oinion
2 cups milk
4 eggs
1 cup bisquick
1/4 tsp. salt
1/8 tsp pepper
Sprinkly ham, cheese and oinions in greased 10 inch pie plate. Beat remaining ingredients until smooth. Pour into pie plate bake at 400 for 30 to 40 minutes. until brown.

Do you think you could make it in a pie plate with out a crust.Until the eggs are set?I am thinking about doing it that way.Dh doesn't like pie crusts.Grrr

I have never tried without crust but I dont see why not. The outside of the egg might get rubbery put extra butter in the pan.

I think that should work just fine since that is basically what a 'frittata' is. When I make my frittata's I cook up some hash browns to put in the bottom of the pan as a 'crust' so that's another alternative. I think it tastes better with the eggs too than a regular pie crust.
