Bacon & Swiss Dip

I stole this recipe from my sister's sister-in-law last Thanksgiving. I made it for the faculty holiday party at my son's preschool, and one for my family on Christmas Day.

Bacon & Swiss Dip

2 cups shredded swiss cheese
1 8 oz. pkg. cream cheese, softened
1 cup mayonnaise
chopped scallion onions (to taste - I used about 3)
bacon pieces (to taste - I cooked 1/2 package and crumbled it)
1 roll Ritz crackers, crushed

Preheat oven to 350. Combine first five ingredients. Add to a loaf pan and cook at 350 for 15 minutes. Remove from oven and spread crushed crackers on top. Bake another 10 minutes.

I served this with Triscuits, but saw a similar recipe from Rachael Ray and she served bread, crackers, and raw carrots with it, too. It's wonderful and very rich!
