Awesome Chicken Salad Recipe

Boil the chicken (easiest to use boneless chicken breast) with celery, onion and parsley
Let chicken cool, then pull apart.(I sometimes skip this step and use either chopped up unseasoned perdue short cuts or leftover rotesserie chicken.)

Add celery, green onions, parsley, granny smith apples & chopped walnuts to the pulled chicken.

Add dressing
Dressing:
1 cup mayo (I use light)
3/4 cup sour cream (I use light)
1/4 cup extra virgin olive oil (I usually only use about 2 TBSP)
2 tablespoons honey
salt and pepper

Cool and refrigerate before serving.

It is delicious served it in whole wheat pitas or wraps with a side salad and some baked Lay's to keep it healthy or used as a topping on a salad. Making it with the low fat ingredients does not affect the flavor. I also almost never use all of the dressing...I just use enough to moisten the chicken then save the rest in a container and add if it gets a bit dry in the fridge.
