okay, call me dumb--but this never occurred to me...the next time your kids want scrambled eggs, instead of pulling out the skillet and heating up the stove, try this--

crack one egg into a microwave safe coffee cup. mix with a fork. microwave for 2 minutes. voila--perfect, cup shaped portion of scrambled egg.

and the cup is virtually clean and ready to be used again. i wish i'd thought of this ages ago!

This is the same way my mom would make them for my brother and I when we were little. We loved it this way. She would also put a slice of cheese on top of that and sometimes we even ate it straight out of the cup! It was great!

We do this often. I use the soup mug from tupperware. It comes out the perfect size for a english muffin. Top it with cheese, sausage, bacon, whatever and you have yourself a egg mcmuffin! My kids love it!

My kids must be rotten. Even the two year old won't eat them this way. I thought I was overcooking them, but I have tried changing the time that I cook, and they still don't eat them. Oh well.

This is how I make my scrambled eggs for myself. If my 1C Pyrex measuring cup happens to be dirty or in the fridge filled with something I'll use a coffee mug. Make sure you spray first with a non-stick cooking spray. I always beat the egg first then add either a touch of water or milk and then the shredded cheese and salt and pepper. I cook it for about 40sec (for 2 eggs) and then beat it again, cook for 20 sec and beat it, etc until it isn't runny. I wish my kids would eat eggs in the morning as this is so easy quick and easy to do when they are starving.

I also use the Tupperware soup bowl. You can pour the egg on top of the English muffin too, and once cooked add the top piece. Too bad my kids are anti eggs, I love them!

I did this this morning and discovered our microwave has a scrambled egg button so it worked great and much cleaner than doing them in a pan.

Hummmm, I'm gonna have to try this. My 2 year old wants scrambled eggs every morning. I also do the bacon in the microwave. 4 slices for 4 minutes. And no greasy skillet.
