lenten dinners

Ask:
with lent coming up I was hoping to get ideas from others who fast/observe lenten meals. I'm not sure if anyone other than Catholics fast so forgive me if nobody understands what I am talking about.
I am looking to serve VERY simple meals(no meat) on fridays. I am diabetic so I don't fast, but would like to scale back on friday dinners. the things we currently do are: rice and beans, noodles, tuna noodle casserole. we usually end up eating the same food every friday. gets old.help

besides fish, we do breakfast for supper (Pancakes, French toast, eggs), or Mac n Cheese, Tomato soup with grilled cheese sandwiches. My ds goes to a Catholic school and today they are having Cheese quesadillas.

We have Salmon patties planned for tonight's dinner and fish sticks for Friday.

-crab stuffed shells
-crab cakes
-quiche
-pancakes or waffles
-cheese tortellini with marinara

-tuna fish sandwiches and clam chowder

We eat a lot of seafood so no meat Fridays are not too hard for us. You can make a veggie pizza, shrimp with pasta, fish and chips, tons of stuff, soup and grilled cheese sandwiches, you name it.

we are really trying to do the recommendations on fasting days, and eating a meal similar to a third world country. I am diabetic so I will be limited.

My church has started a cheese enchilada dinner a few years back. we broke the fish fry mold.

I do alot of the ones mentioned. Also:
spaghetti
tuna boats and vege soup
waffles
breakfast burritos
grilled shrimp
shrimp gumbo
loaded poato soup and salad
salmon cakes
baked fish
shrimp salad
crab cakes
shrimp tacos
make a meal out of two boxes of pasta roni make it and add in shrimp
clam chowder
