way too much chicken!

I have been buying chicken leg quarters liike crazy because they have been really cheap like 59 cents per pound! I grabbed a bunch of it but need some new recipes for chicken parts and pieces. Anything would be wonderful.

CHICKEN AND DUMPLINGS

2 1/2 pounds chicken thighs or legs
5 cups water
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
3/4 pound new potatoes, quartered
3 carrots, cut into 2-inch pieces
2 celery ribs, sliced
1 medium onion, cut into eighths
1 (10 ounce) package frozen peas

DUMPLINGS:
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons butter or margarine
3/4 cup milk
1/4 cup minced fresh parsley

Place chicken and water in a 5-qt. Dutch oven. Cover and cook over medium heat for 1 to 1-1/2 hours or until chicken is tender. Skim fat. Remove chicken from broth; allow to cool. Debone chicken and cut into chunks; return to broth. Add next nine ingredients. Cover and cook over medium heat for 15-20 minutes or until vegetables are tender. Meanwhile, combine flour, baking powder and salt in a bowl; cut in butter until mixture resembles coarse crumbs. Stir in milk and parsley. Drop dough by rounded tablespoonfuls into simmering stew. Cook, uncovered, for 10 minutes. Cover and cook for 8-10 minutes or until the dumplings are tender.

CARMELIZED BAKED CHICKEN

3 pounds chicken wings
2 tablespoons olive oil
1/2 cup soy sauce
2 tablespoons ketchup
1 cup honey
1 clove garlic, minced
salt and pepper to taste

Preheat oven to 375.
Place chicken in a 9x13 inch baking dish. Mix together the oil, soy sauce, ketchup, honey, garlic, salt and pepper. Pour over the chicken.
Bake in preheated oven for one hour, or until sauce is caramelized

Buy a large bottle of teriyaki sauce (or make your own). Marinade the legs for a while then bake. They're very yummy. Serve with rice and a side veggie. I haven't made this in a while, but I should. Maybe that will be dinner on Sunday.

Mix together in large bowl. put chicken pieces in bowl and get the chicken covered with the mix. You can even let it marinate in the frige. if you want. Than put in a casserole dish-chicken and soup mixture. Bake covered @ 350* until chicken is done. than take out of the oven and place chicken in serving dish, cover with alum. foil (use the same piece that you used in the oven) than put the casserole dish on a burner on med/med high. pour in 1/2 cup of water and stir/scrap all the baked on yummyness to make a gravy. Pour gravy over chicken.

Kraft has a great oven fried chicken recipe. You marinate it in light Ranch dressing and coat it with shenbake before cooking. Also, dh got my kids hooked on chicken and ramen noodles. He boils the chicken first and then cuts it up into small pieces and then adds the noodle pack and seasoning to the water and lets it cook until done.

I buy them when they're on sale and put them in the slow cooker. Once they're cooked I shred them up and freeze them in little bags. It's perfect for quick pasta or soups. I use it in chicken helper and chicken pot pie too. It saves me a ton of time and gets DS to eat meat better!

Chicken salad sandwiches, enchildas, soups, chicken tacos, casseroles, etc. I do this as a time saver more than anything but also pick up chicken breasts when they are on sale for .99 pound and come home top process it right away.
