2 cups water
1 cup uncooked white rice
1 1/2 pounds leftover roast pork, cubed
2 (10.75 ounce) cans condensed cream of celery soup
1/2 cup mayonnaise
1/2 teaspoon ground black pepper
1/2 teaspoon curry powder
1 (10 ounce) package frozen broccoli, thawed
Preheat the oven to 350 .Place rice and water in a saucepan over medium-high heat and bring to a boil. Once the water is boiling, reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender. In a large bowl, mix together the cubed pork, rice and broccoli. Stir in the cream of celery soup and mayonnaise, then season with pepper and curry powder. Transfer to a 9x13 inch baking dish, and cover with aluminum foil.
Bake for 45 to 50 minutes in the preheated oven, until evenly heated through. Remove the aluminum foil for the last 5 minutes in the oven.

With a meat grinder (or food processor for that matter) grind up your pot roast, carrots and potatoes that you made with the roast. Add the gravy (drippings etc.) to the ground up mixture along with a small can of evaporated milk. (I personally don't add the whole can, but just enough to make it moistish. It is all personal preference.) Add a little fresh garlic and salt as well.
Spread in a 9 x 11 baking pan and top with butter bread crumbs, buttered corn flake crumbs or smashed potato chips - whatever you prefer. Bake at 350 degrees for 30 minutes or until hot and bubble.
My Dad and I like it sprinkled with some vinegar, but some like it just as it is. It is one of my favorite dishes and I will always show up for dinner at my parent's house on Hash night!

Beef Stew...I make a roast & throw in some potatoes, carrots, make a gravy and then in a day or so I always make beef stew using the graving & adding some additional ingredients, whatever your family prefers, I throw is some pureed green & red peppers, corn, ketchup, beef base & seasonings. Depending on where you live, its good on a cooler day!!
