Easy Enchilladas

Ask:
1 package of flour tortillas, medium sized
1 8oz. can tomato sauce
1 1/2 c. water
1 package McCormick Enchillada Sauce Mix
1 package cream cheese (I use f/f)
12 oz. cheddar cheese (I use low fat)
1 pound hamburger meat, cooked and well drained (optional, as I am a vegetarian and don't use it in MINE!)

Mix sauce mix, water, and tomato sauce into a saucepan. Heat until just boiling and turn off. Spoon enough into the bottom of a 9x13" casserolle dish until bottom is covered. Take a tortilla, spread cream cheese just across the middle....I just cut off 1/2 inch "slices" from a block of cream cheese and spread it out. Sprinkle cheddar cheese on top of the cream cheese, and add hamburger meat to the top of that if using. Roll the tortilla up with all the good stuff inside, and place at end of dish. Repeat until dish is full. Sprinkle all remaining cheddar cheese across top of dish. Cover with foil and bake at 350" for 25 minutes.

This was really easy!! I just had to substitue enchilada sauce for the tomato and the
Sauce mix as the store I was at did not have any.
and I use veggie crumble instead of the burger!!

WalMart carries the McCormick mix (and it is not as hot as the canned), as does Kroeger. My mom gets hers on base, but we aren't military!

I have a question about the tomato sauce mixture. You said to put in enough to cover the bottom of the pan? When do you add the rest?
