Easy Orzo Vegetable Soup
1 tablespoon vegetable oil
1/2 cup diced onion
2 cloves garlic, minced
1 medium carrot, diced
1 stalk celery, diced
1 small zucchini, diced
2 cans (14 1/2 ounces each) vegetable broth
1 can (15 ounces) garbanzo beans (chickpeas), undrained
1/2 cup water
1/2cup frozen corn
1/2cup frozen peas
1 teaspoon dried thyme
1 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1/2 cup orzo
In a large saucepan over medium-high heat, add oil, onion and garlic and sauté a few minutes until tender. Add carrot, celery and zucchini and sauté until vegetables are mostly tender. Add broth and garbanzo beans. Rinse can with 1/2 cup water; add the water to pot along with the frozen vegetables. Bring just to a boil, reduce heat to simmer and add thyme, oregano, salt and pepper. Add orzo and simmer until orzo is tender, about 8 to 10 minutes.

Meatballs with Orzo
1 onion, chopped
1 Tbsp. olive oil
14 oz. can ready to serve beef broth
1 cup uncooked orzo pasta
1 lb. frozen cooked meatballs
14 oz. can Italian flavored diced tomatoes, undrained
4 plum tomatoes, chopped
1 cup freshly grated Parmesan cheese
In large skillet, cook onion in olive oil under tender. Add beef broth and bring to a boil. Stir in orzo, meatballs and tomatoes, stir. Return to boil. Cover and reduce heat to medium-low. Simmer 7-8 minutes until liquid is reduced, stirring occasionally. Add plum tomatoes and cook 5-8 minutes until orzo is tender, stirring frequently. Sprinkle with cheese and serve.

I use it all the time as a quick pasta side dish...just make as you would any pasta, boil in plenty of salted water til al dente, and then drain. I toss it with a little bit of butter (or olive oil) fresh minced garlic and fresh chopped parsley. My kids love it that way...they sometimes put grated romano or parmesean cheese on it.
It's also good in soups...

I love orzo and pretty much treat it like rice, but it is versatile. You can add it to soups, also or flavor it w/chicken broth, veggies and spice and use it as a side dish.
