you just wanna watch the handles for most part.
'Im a big cast iron fan...but do have some expensive ones with metal handles I do ocasionally roast in.
I am not sure but I believe also that nonstick shouldn't be put in the oven(I think I heard that somewhere)
and most are usually good to 400,some 450.

Not sure about the non-stick thing, but you can double-wrap any handle with tinfoil and be okay there.
