I have made cupcakes from cake batter (box kind) but never muffins. I plan on making mini muffins this week. Does anyone have any good muffin recipes? And another question, with muffins do I use those papers that I use for cupcakes? Do they even make papers for mini muffins?

Here is one from the preschool cookbook we printed this year. Just tried them last week and they are really good.
Applesauce Mini Muffins
½ cup shortening 1 tsp baking soda
¾ cup sugar 1 tsp baking powder
2 eggs 2 cups Flour
1 tsp vanilla 1-cup applesauce
1 tsp salt ¾ cup chocolate chips (optional)
1 tsp cinnamon ½ cup coarsely chopped walnuts (opt.)
½ tsp nutmeg
Cream shortening and sugar add eggs, vanilla and applesauce, mix well then add dry ingredients, mix well, pour into mini muffin pans. (Sprayed with nonstick cooking spray) And bake at 350 degrees for 15 minutes or until an inserted knife or toothpick comes out clean.

you can buy mini muffin papers...You don't actually have to use liners at all...just spray your muffin pans and when done...well,I have a rubbermaid container that is like a 9x13(approx)size-they fit in there perfect.
I listed a few muffin recipes my daughter and I like-but if you have a specific kind your lookin' for just say so...we all have lots of good recipes and we're willin' to share
minis are good for kids...my daughter will eat them better if their mini than a full size one.

pineapple muffins
2 cups all-purpose flour
1/2 cup white sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 (8 ounce) can crushed pineapple
1 egg, beaten
3/4 cup milk
1/4 cup butter, melted
1/4 cup butter, melted
1/4 teaspoon ground cinnamon
1/3 cup packed brown sugar
1/2 cup all-purpose flour
Preheat the oven to 375
Grease and flour muffin pans, or line with paper liners.
In a large bowl, stir together 2 cups flour, white sugar, baking powder and salt. Drain pineapple, reserving 1/4 cup juice. Make a well in the center of the dry ingredients, and pour in the reserved juice, egg, milk, and 1/4 cup melted butter. Mix just until blended.
In a separate bowl, stir together the cinnamon, brown sugar, 1/2 cup flour, and 1/4 cup melted butter to make the topping.
Spoon batter into muffin cups, then spoon crushed pineapple over the batter and sprinkle with the cinnamon topping.
Bake for 30 minutes in the preheated oven, until a toothpick inserted in the crown of the muffin comes out clean.
strawberry muffins
1/4 cup canola oil
1/2 cup milk
1 egg
1/2 teaspoon salt
2 teaspoons baking powder
1/2 cup white sugar
1 3/4 cups all-purpose flour
1 cup chopped strawberries
Preheat oven to 375
spray with non stick spray an 8 cup muffin tin, or use paper liners.
In a small bowl, combine oil, milk, and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.
Fill muffin cups. Bake at 375 for 25 minutes, or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.
orange muffins
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
1/2 cup white sugar
1 tablespoon grated orange zest
2/3 cup orange juice
1/2 cup melted butter
2 eggs
1/2 cup ground walnuts (optional)
1 tablespoon melted butter
1/4 cup packed brown sugar
1/2 teaspoon ground cinnamon
Combine flour, baking powder, baking soda, salt, white sugar and grated orange peel. Stir in orange juice, 1/2 cup melted butter, eggs and chopped nuts.
Pour into 12 muffin cups.
Blend 1 tablespoon melted margarine, 1/4 cup brown sugar, 1/2 teaspoon cinnamon and sprinkle on top of each muffin. Bake in a preheated 350 oven for 20-25 minutes. Serve warm.(I like having these with tea)

You can probably make these as mini muffins, but I'll give you a really good muffin recipe.
Pumpkin Spice Muffins
one box of spice cake
one 15 oz can of pumpkin
These are the only two ingredients. Mix the two together & bake according to the box for the muffins. I usually sprinkle oats & a litte brown sugar mix on top. They are really yummy! Try them. Hopefully you like them as much as my family does.

those actually sound great..we love pumpkin...I make so much pumpkin stuff I didnt think their was a recipe out there I hadn't tried....so I am gonna be all over these.....can't wait for daughter to be better...I'll let her mix em.
