Pancakes! Not just for Breakfast anymore!!!

Ask:
Pancakes...one of those things alot of us do now for both breakfast
AND dinner these days...but also one of those standards that doesn't
have to get boring.

Treehugger is actually the one responsible for this thread really,
she mentioned the "build your own pizza" night she had,which prompted
me to tell her about the "potato bar"idea...which got me thinking...
so here we are...


~~~~~~~~~~PANCAKES~~~~~~~~~~~

stir in ideas:

how about chips:vanilla
butterscotch
or even the standard chocolate(although I prefer the mini for this)

fruits(besides the standard blueberries and diced apples)
how about: chopped pears
golden raisins

there's plenty of dried fruit options:apricots,cherries,these come many diff kinds
even canned fruit: my daughter loves drained pineapple in hers.

nuts to can add some texture.

I have a friend who mixes a small handful of granola in hers,you can also find recipes
now too that have oats in them.

to make a plain pancake special top it with some sour cream and a small spoonful of
pie filling.

even toppings could be changed:

put banana in the pancake and top with peanut butter.
a pineapple pancake with blueberry sauce or syrup(that even sounds gourmet)
almand pancakes with with warmed maple syrup(with a dash of cinn/nutmeg in the syrup)
I saw a woman at Bob Evans last time I was there put applesauce her p.cakes
sweeten cream cheese with a little brown sugar/smear on top/and a layer of
more chopped fresh fruit,roll up and eat that way(pancake wrap???)

I love pancakes!!! I have one question though - what makes Cracker Barrels pancakes different - they are my favorite and they are unlike any others - I bet mommy2mercedes will know!!!! I would love to add whatever it is they add to my recipe!!!!

I've never actually ate at a cracker barrel restaurant...

But I did some digging and come to find out we do have one that's not too far away

When my husband is home,we almost always go out for a family breakfast so I think we're gonna try it!!

One thing that I think really holds people back on good pancakes is the BISQUICK RUT !!!

It's fast and it's easy...and after a while you just forget that it is equally as fast and easy to make homemade ones...which honestly I believe are by far better and worth the 3 extra steps over bisquick to make.(And don't get me wrong...I have bisquick in my cupboard too-it is cheap and it's also multipurpose )

I have 2 homemade pancake recipes that I make...one for when I have buttermilk on hand and one for when I do not...the one using regular milk was listed a while back under main recipes and is titled "who needs bisquick pancake mix"

but anyway...according to cracker barrels on line menu...what I saw anyway was buttermilk pancakes...so keeping in mind I have never ate at a C.B. and know only that one can assume buttermilk is an ingredient here's the recipe that has managed to make it's way to my box...I say only that it does turn out pancakes and contains buttermilk(and I like bought buttermilk for this not the milk/vinegar cocoction)

BUTTERMILK PANCAKES
~~~~~~~~~~~~~~~

3 c flour
3 TBS sugar
3 tsp baking powder
1 1/2 tsp baking soda
3/4 tsp salt

Mix all in a bowl

3 cups buttermilk
1/2 cup milk
1 Tbs vanilla
3 eggs

Whisk these together in sepearate bowl.

Do not mix dry with wet until ready to cook.

Once greased skillet is ready to go,mix all ingredients.

THIS IS A KINDA THICK BATTER so you have to do a little

spreading in the pan but DO NOT let this fool ya...these

are NOT heavy pancakes!!!

These make 10-14 pancakes(depends on size you make them if you 1/2

the recipe use 2 tsp vanilla)

GOOD LUCK....even if they're not Cracker Barrel...you'll love em
