We normally serve ours with butter ~ sometimes sour cream ~ but am looking for some other yummy options to top these bad boys off with.

I usually put "real bacon bits" on them (the soft kind), or broccolli & cheese (frozen package), shredded cheddar cheese, chili (fills you up!), or just butter and sour cream. Depends on what I have handy.
Also, I like to make "twice baked" potatoes... Slice in half (lenghwise), scoop out the insides, mash and mix with cooked onion, cheese, salt, bacon bits, or whatever you like, then return to shells, filling about 3/4 of the way and then put MORE cheese on top and put in oven until the cheese melts....Man, now I'm hungry!!

I like all different kinds...
some of my favorite toppings:
chili, butter, sour cream, broccoli, bacon bits, cheese, salsa, fajita chicken or steak...the list goes on.
my aunt likes shrimp with some kind of sauce on her's.
I guess you can top it with anything lol.
