Eggs, eggs and more eggs

We have chickens with a friend(they live at their house) and they are laying like crazy!!! We give them away to anyone who will take them, but right now I have 4 dozen in the fridge! I've made more angel cakes than I care to count, and egg bake is getting old....so what else can make that uses alot of eggs and is somewhat healthy?

I can't think of too many things that use a lot of eggs that are that healthy, fatwise. You could make a lot of quiches and freeze them. You could make a million different breakfast casseroles (french toast kind, kind with english muffins and sausage) and freeze them. You might even want to see if you could make your own version of Pour a Quiche (or whatever it's called) or Eggbeaters and freeze them in whatever sized serving portions you like.

I am sure you have thought of egg salad sandwiches- not to healthly though. What about baking cookies and freezing them-

marange (sp?) pies, potaote salad, muffins, add eggs to hamburger meat, meatloaf

I am pretty sure egg whites can be frozen- its the yolks that do not do well frozen.

You can do Alton Brown's cheesecake recipe w/ lowfat cream cheese and lowfat sour cream, it uses 2 eggs and 3 yolks. (And it's my fave cheesecake, very creamy, even w/ the lowfat stuff!)

Or pudding. Do your kids eat pudding for a snack?

What about homemade noodles or pasta? And you can dry it and store it, so you don't have to worry about using it right away.

You could have breakfast for dinner, scrambled eggs, omelets, quiche, hard boiled eggs, fried rice with eggs in it, egg drop soup, if you have a dog scrambled the eggs and use some rice for the dog food, egg sandwiches with cheese or egg bread. Hope this helps.

Cheese Pie (kina similar to a quiche)


1 1/2 c shredded Cheddar cheese
4 eggs
1 c heavy cream
1 c milk
3 drops hot sauce
1/4 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1 (9 inch) unbaked pie crust

Preheat oven to 425
Spread shredded cheese in the bottom of pie crust.

Mix eggs, cream and milk. Season with hot sauce, salt, pepper and paprika. Pour filling over shredded cheese in the pie crust.

Bake 40 to 50 minutes, or until golden brown. Cool 10 minutes before serving.

Let the kids set up an egg stand and keep the money they make!

I would check and see if you could give them to a food pantry, homeless shelter, or a shelter for women. No way could I go through that many eggs.

Fritatas. I saute up lots of veggies in my cast iron pan. Then pour over beaten eggs, continue to cook until bottom is almost done and pop it in the oven with cheese on top. Slice it like you would a pizza.
