Eggplant parmasian

Slice eggplant, dip in flour, eggs, italian bread crumbs, fry in olive oil until brown and soft. Top w/ spaghetti sauce and mozzarella.

You can do the same w/ zucchini and alternated layers of zucchini and eggplant in a casserole dish with sauce and cheese in between like lazagna.

I cut zucchini into long strips and bread them and add hot sauce.

Zucchini taco boats are really good. Slice them down the middle lengthwise and scoop seeds out w/ a spoon. Fill with prepared taco meat (or veggie taco meat). Wrap in foil and bake in the oven until zucchini is soft. Take out of oven, top w/ chedder cheese and put back in until the cheese melts. If I'm short on time, I put the sliced zucchini in the microwave and then just fill top w/ cheese stick back in long enought to melt the cheese.

I haven't tried this, but I saw it on Paula Deens show the other day. Poke holes in an eggplant with a knife. Insert a clove of garlic in each hole and bake. When they are soft, remove from oven, skin the eggplant. Put it and the garlics in the food processor and use as a dip.
