Banana Cake

My mom has made this recipe since before I can remember. I have no idea where she got it from. I am sure it has been so long that she doesnt know either. Dont know why it is called a cake beings there is no frosting on it. That is just what we all called it.

2 cups all purpose flour-Sifted
1 teaspoon baking powder
1 teaspoon vanilla
2 ripe bananas mashed
1 1/2 cup sugar
1/2 cup butter softened
2 eggs seperated
1 cup butter milk OR 1 cup milk plus 1 teaspoon white vinegar. Let set out on counter while you get everything ready
1 teaspoon baking soda


Preheat over to 350*. Sift all dry ingredients together and set aside. Cream butter and sugar, add egg yolks. Add milk. Add sifted dry ingredients a little at a time. Add in mashed bananas and vanilla. In seperate bowl, beat egg whites until they form peaks. Fold in egg yolks into cake mixture with spatula. Pour mixture into greased and floured 13X9 pan. Bake for 45-60 minutes depending on your oven and altitude. Just do the toothpick test after 45 and keep an eye on it.

My mom's bf loves banana cake w/ cream cheese icing, but I think it's too rich. I made it a couple years ago for a friend and we had it w/ just cool whip, which was really good!

I think it is perfect without frosting. Plus if you dont put frosting on it, than you can always have it for breakfast.
