Make A Mix

I tried to order this book on Amazon last year. It ended up being out of stock forever, so 2 months later I had forgotten about it, but got an email from them and canceled the order. I haven't reordered it yet and can't right now. Does anyone have any mixes they make that is used in a bunch of different recipes. I'll share the one I have. I got it from a neighbor.

Oatmeal Mix
3 cups flour
3 1/2 tsp baking powder
1 1/2 tsp salt
1/2 c sugar
1 c brown sugar
1 1/2 cups shortening
3 c rolled oats
In a large bowl sift together flour, powder, salt and sugar. Stir in brown sugar. Mix well. With a pastry blender cut in shortening until evenly distributed. Stir in oats. Put in large air tight container. Label Stor in a cool dry place. Use within 10-12 weeks. Makes about 9 cups of mix.



Oatmeal Muffins
1 egg
2/3 cup milk
3 cups Oatmeal Mix
Preheat oven 400 degrees. Butter muffin pan or use muffin paper. Put oatmeal mix in bowl. Combine egg and milk in small bowl. Add to the oatmeal mix. Stir until just moistened, batter will be lumpy. Fill muffin tins 2/3 full. Bake for 15-20 min until golden brown. Makes 12 muffins.



Oatmeal Cookies
1/4 c milk
1 tsp vanilla
1 egg
3 cups Oatmeal Mix
1/2 tsp cinnamon
1/4 tsp cloves
1/2 cups raisins
preheat oven 350 degrees. Lightly grease baking sheet. In a small bowl, combine milk, vanilla, and egg. Put Oatmeal mix, cinnamon, cloves, in a medium bowl. Add liquid all at once and stir until just belnded. Stir in raisins. Drop by spoonful on cookie sheet. Bake 10-15 min. Makes about 2 dozen.



I have 2 more recipes that take the Oatmeal Mix. I will post them later I need to start making my potluck for the bbq tonight.

2 Tbsp sugar
1 Tbsp + 1 ½ tsp baking powder
1 c shortening
½ tsp salt
2/3 c powdered milk

Stir together flour, baking powder, salt, and sugar. Sift together 3 times.Cut in shortening til the mixture is similar to cornmeal. Add dry milk. Use in recipes that call for Bisquick or all-purpose mix.

4 c cornmeal

Combine the flour, salt, sugar, and baking powder in a large bowl. With a pastry blender or two knives cut in shortening until particles are fine. Add the cornmeal and mix well. Store in refrigerator in an airtight container for 3-4 months.
