I tried this tonight on some halibut we had but I am sure it would be just as wonderful on any other white fish. It gives it just a hint of flavor to make it not so boring and tasteless. I personally LOVE Halibut, but after having it one way som many times I had to try this.
2 Tablespoons butter
2 Tablespoons soy sauce
2 Tablespoons brown sugar
1 Tablespoon lemon juice
2 cloves garlic (minced)
1/2 teaspoon ground black pepper
1 lb. Halibut Steak (or other white fish)
You should heat up the grill before you start making the sauce because it is pretty quick. On med heat (lower if it boils) stir all ingerdients minus the fish together and heat until brown sugar has disolved completely. When you go to put the steaks on the grill you can either lightly oil it or just lightly oil a piece aof tinfoil which I did. baste one side of the steaks and place THAT side face down on the grill. Baste the other side as well then and cook about 5 minutes on each side or until the fish is white and flakes easily.
It was WONDERFUL!
