I know that hashbrown casserole freezes well, and you could shred some for french fries or cut them into chunks for southern style potatoes...If you'd like the casserole recipe, I'll post it...
Actually, I was just wondering today if I could freeze the base ingredients of my potato soup...I cooked it in the crockpot only to find out later that we are eating at a friend's house..

I few posts down there is a topic called lots of freezer recipes. In there is a recipe for twice baked potatoes.
Also, I make a large batch of mashed potatoes and freeze them in smaller containers.
