Easy soup recipe's anyone?

I have decided to stretch the grocery money further we would have a soup and bread night, but now I need soup recipes. I have a great Potato soup but then what? Something cost efficient and easy would be great.

1 can corn kernels
1 can pinto, kidney, navy, or black beans
1 small can tomato paste
4 cups water

Pour all ingredients into pan, heat to a boil and then lower heat to simmer for 10 min.. Season to taste with salt and pepper. Serve and enjoy!

This is pretty easy and cheap...this is off the top of my head.You can add to it if you like.
You can make a lot at one time and place in freezer for another dinner or too just double up on the receipe.

1lb ground meat or turkey (healthier)
1 med. bag of frozen mixed veggies.....I do carrots, corn, green beans.
4-5 beef bulions
1 can of diced tomatoes...do not drain
1 can of tomato sauce
1 cup of water
1/2 box of elbow pasta...cook separate, then add to soup
1 pinch of salt
1 pinch of pepper
1 can of light canned kidney beans

cook meat thoughly separate and drain.

diced tomatoes and sauce, water, salt, pepper, kidney beans, and bulions are placed in a large pot and heated to a boil then placed on simmer for 15 mins.
add meat and veggies to soup and simmer for another 10-15 mins.
add pre-cooked pasta to soup
mix and let cook for another 10 mins. and it should be ready to eat.

Total prep and cook time about 40 mins.

I rarely use a recipe for soup.

I usually make it with leftovers if we have beef. Add any drippings or gravey add water, carrots, onion, potatoes/noodles any other leftover veggie you like.

I buy lots of chicken leg quarters when they are on sale. I boil some for broth, take chicken off the bones and return to pot, add onion, celery, carrots, a bay leaf, salt.

here is my recipe for italian wedding soup.


8 cup chicken stock,
mini turkey meatballs (recipe follows)
2 cans drained chick peas or othe white bean
2 cloves garlic minced
1 onion diced (med)
3 ribs celery diced
3 carrots diced
1 green bell pepper minced
1 cup diced zucchini or other summer squash
1 cup green beans (fresh or frozen)
(you can subsitute the zucchini and beans for 1 16oz bag of frozen mixed veggies if that whats you have on hand.)
italian herbs dried or minced fresh (basil, oregano,)
salt and pepper to taste
olive or other oil.
cooked small pasta. (cook pasta separately from soup)

put 1 tbsp olive oil in pot. Saute onion, celery carrots and bell pepper until just soft but
not browned. add chicken stock. simmer for about 1/2 hour.
add browned mini meatballs and chick peas, simmer another 1/2 hour.
add zucchini and green beans (or frozen veggies) simmer until these veggies are just tender.
Serve soup with 1/2 cup pasta in each bowl

mini meatballs.
1 lb ground turkey.
2 cloves garlic minced.
1 cup fine dry bread crumbs
1 egg (beaten)
1 tablespoon italian herbs
salt and pepper to taste

Mix all ingredients together. Make small meatballs, using 1 to 2 tablespoons meat.
brown these meatball (either in a fry pan or in a well greased pan placed in a 400 degree oven. ( I always use the oven no mess)
When browned add to soup.

I have an easy vegetable beef soup that I love. It's really easy.

Just take 1 can V8 juice (can use the spicey kind if you're adventursome) and dump in one pound of stew meat and a whole onion. Simmer a few hours. Then you can remove the onion and dump in a couple of diced potatoes and carrots. Simmer another few hours. Then dump in a can of peas, a can of whole kernel corn, and a can of green beans...liquids included. Simmer another hour or so. Then you CAN dice up about a quarter of a head of cabbage and simmer another little bit. I love cabbage in veg. soup, but if your family doesn't like cabbage you can leave it out.

You can play with the times and combos some. Sometimes if I don't have fresh potatoes, I've substituted canned round potatoes, or I'll use different veggies if I don't have those. The whole thing from start to finish on the stove is about 4 hours, but the longer it's cooked, the better. It's really better the second day. I've also done it in the crock pot. HTH

1 medium onion, chopped 1 16-oz stewed tomatoes, cutup
2 Tbsp margerine 1 tsp Italian seasoning
8 cups Water 1/8 tsp garlic powder
3 Tbsp beef bouillon 1/8 tsp pepper
1 cup chopped celery 1/4 tsp salt
1 cup Alphabet noodles, uncooked


INSTRUCTIONS
In large stockpot, cook ground beef and onion in margerine until beef is browned. Add water; bring to a boil. Stir in remaining ingredients except Alphabets. Simmer 45 minutes. Stir in alphabets; cook 10 minutes longer, stirring occasionally. Refridgerate leftovers.

I omit the chopped celery and just add celery salt. and I use Diced tomatoes instead of Stewed.

Vegetable and Black-eyed Pea Soup

6 oz lean cooked ham, diced
4 medium carrots, thinly sliced
3 medium stalks celery, thinly sliced
1 small zucchini, chopped
32 oz can black-eyed peas, drained and rinsed
32 oz can stewed tomatoes
14 oz can chicken broth
1/4 teaspoon pepper
3 cups water

Combine all ingredients and heat to boiling. Simmer until veggies are tender to your liking.

This makes a lot! I found this years ago on another budget board.

I made a soup just like this one and forgot all about it.I will have to make this for the kids soon.
