ingredients you already have in the cabinet? Like one good enough to fix again?! :D I did tonight. I had my "ME" day...and I was not into cooking and plus we are low on groceries right now! So, I dug in the freezer and found kilbasa...the ones that are just a bit bigger than hot dogs. I came in and cut them up into bites. Then, I had rice, so I made that. Well, apart, they didn't look very appetizing. So, I searched some more and found a box of velveeta cheese. I diced it up and added it to the sausage and poured some BBQ sauce and seasonall in the mixture. After the cheese melted a bit (not all the way, cause I discovered I kept scorching the bottom of the pan), I poured the rice into a casserolle dish, poured the sausage/cheese mixture on top and baked for 20 minutes. My entire family LOVED it. It was quick, easy, and cheap..AND used up things from my pantry! I will do this again, that is for sure. (next time, I will not do the sausage and cheese in a seperate pan..just will pour over rice and bake!)

mac a roni and cheese with tuna and peas...and she calls it MacTuPea. I loved it as a kid, so I actually try to have the ingredients on hand when I need an "easy" dinner. My sons love it too.

Leigh - I love the Vegetable or Vegetable beef Chunky Soup served over rotini noodles. Fast, filling, easy and cheap. Makes 2 large servings depending on how many noodles and lots of good veggies that I would not normally eat. Hadn't thought of putting it over rice though. Have you seen that infomercial where they mix the soup with stuffing in a box? I keep meaning to try that too.

I've made a couple of meals like that--searching through the pantry and throwing stuff together. For the most part they've tasted okay, but I've not had any real big winners. My most recent "throw it together" was ground beef with half a bag of frozen hashbrown potatoes tossed with bbq sauce and cheese. It was my best attempt so far.

I struggle for lunch ideas everyday. Today, I had some leftover saute'd zucchini slices. I heated and drained them and put them on a flour tortilla and topped them with melted velveta that I added salsa too. I folded the tortilla in half and then in half again to make a pocket. They were yummy (not healthy, but yummy!)

Yep, I do this all the time! Even with set meals, most of the time I don't even follow that (well unless it's like spaghetti or something frozen like potpies). Sometimes I think I'm going to just stop buying set things for meals, and just buy random stuff that I can throw together for dinner. I do "garbage wraps" at least once a pay period. A bunch of random things thrown together in a tortilla with some cheese. :D
Some things I've put inside:
-Canned potatoes, chopped up and heated with butter & seasoning in microwave until warm.
-chicken breast, breaded or not, cut into pieces
-random vegetables
-eggs
-rice
-leftover steak, pork, beef roast, etc.
Another thing I do for lunch or "ugh do i gotta cook tonight" dinners... Heat a can of soup on the stovetop and once it's boiling, add mixed up dumplings (Bisquick) to top. Cook 10 minutes on top of boiling soup uncovered, sprinkle with parsley & paprika, or italian seasoning if it goes with the soup, then cover and cook 10 more minutes. Voila, instant dinner.
Another quick one I use:
Into casserole dish: chicken, carrots, onion, can of potatoes cut in half if needed (can use other veggies or add whateve ryou want). Open can of cream of chicken soup, add splash of milk, pour over casserole. bake at 350/375 until done. sometimes i add cajun seasoning to the soup for a different twist.

I love these ideas!! I'm going to keep them in mind. I don't get home until after 4 most days and Wyndser goes to bed by 7 or 7:30, so I like to have things sometimes that I can make really quickly. These sound great!!
