A friend of mine who I have grown apart from her dh and two girls are coming over for dinner this weekend. I am making spaghetti and focaccia bread with a salad. I fugured that was a frugal yet yummy meal all would enjoy. But I am stumped on dessert. any suggestions?

Someone on here posted a while back about using an angel food cake cake mix ($1) and mixing it with just a can of mandarin oranges (cut up, but juice included) (under $1!). You bake it just like that..and it is DELICIOUS!! We tried it!

this is simple and easy.
Can you get round shortbread biscuits? Put one on a plate for each person, whip some cream stiffly (dont use aerosol cream it wont work).
Put the cream on each shortbread biscuit and decorate with fruit, I use strawberries if its the season but slices of any fresh fruit will do.
it should be possible to put another shortbread biscuit on top of this, either split in two (for extra designer presentation!)
you can even scatter chocolate shavings over it if you like
its quick to do but doesnt take kindly to doing ahead.
